PAD THAI
This is one of our family's favorite dishes!
Unfortunately, I don't have exact amounts of the ingredients because I've never measured.You can customize it per your family's preferences.

Ingredients:

2 large chicken breasts

Olive oil

Garlic powder
-
Onion powder
-
Black pepper
-
Shredded carrots
-
Chopped green onions
-
1 Can of bean sprouts
-
2-3 eggs
-
Chopped peanuts
-
Chopped cilantro
-
1 Bottle of peanut sauce (see note)

1 Package rice noodles
Directions:

Cut chicken into bite-sized pieces.

Heat olive oil in a large skillet. Add chicken. Season with garlic powder, onion powder, black pepper, or other seasonings as desired.

Add carrots and green onions and continue to cook, stirring often.

Drain liquid from can of bean sprouts. Add to pan.

When chicken is cooked and carrots are soft, crack eggs directly into pan and scramble.

Cover with peanut sauce, adding until food is coated (I usually don't use the entire bottle.

Mix thoroughly.

Put the sauce mixture on top of cooked rice noodles.

Top with cilantro and peanuts.

This meal can easily be modified for babies!

Reserve a portion of the Pad Thai mixture for baby just before adding the sauce. I leave the sauce out because it is high in sodium and has added sugar.

Do not add chopped peanuts on top because of the choking risk.

If your baby is still using a palmar grasp to grasp food objects, you may consider leaving some of the chicken in a long strip instead of cutting into bite-sized pieces
*NOTE: this is the brand of peanut sauce I use. You could definitely experiment with other brands or make a homemade sauce.
